Cinnamon roll cake

For this cake, we gladly throw our New Year's resolutions overboard! And off we go:

You will need these ingredients:  

Dough: 

  • 100 ml warm milk 
  • 200 ml whipping cream
  • 1 packet dry yeast 
  • 4 tbsp sugar 
  • 75 g melted butter
  • 1 egg, beaten
  • Pinch of salt
  • 530 g flour

 

Filling:

  • 65 g very soft butter
  • 150 ml whipping cream
  • 65 g sugar 
  • about 3 tsp cinnamon (more if desired)

And here’s how:

1. Mix milk, butter, cream, 2 tbsp sugar and warm slightly (just above hand warm). Stir in yeast, salt, egg, 2 tbsp sugar, and half of the flour (either with a wooden spoon or in a stand mixer with a dough hook). When everything is thoroughly combined, stir in the remaining flour and knead everything into a smooth dough, about 5 minutes. *Since the dough is very soft, I recommend preparing it with a stand mixer; kneading by hand is almost impossible.

Place the dough in a clean, oiled bowl and let it rise covered at room temperature to double its volume (about 1 hour), depending on temperature.

2. Meanwhile, warm butter, cream, cinnamon, and sugar for the filling until the filling has a slightly thick consistency. Then let cool again.

3. After rising, knead the dough briefly and lightly, then roll out on a well-floured work surface to 45 cm x 60 cm. If it is still too sticky, lightly flour and turn it repeatedly while rolling. This prevents it from sticking to the work surface.

4. Spread the rolled-out dough thinly with the filling. Roll the dough from the short side and cut the roll into pieces about 3 cm wide. 

5. Line the bottom of the springform pan with baking paper and clamp it with the pan (excess baking paper can then simply be cut off). Arrange the cinnamon rolls in a circle in the springform pan. Note: If not all cinnamon rolls fit, bake the rest in a loaf pan.

6. Let the cinnamon rolls rise again covered at room temperature until they have clearly puffed up, about 1/2 hour. For some shine, you can brush the cinnamon rolls before baking with 1 tbsp egg mixed with 2 tsp milk (Note: I like to make a bit more filling and brush the cinnamon rolls with it).

7. Bake at 170°C convection in a preheated oven until golden brown, about 20-25 minutes. Let cool slightly and drizzle with icing (powdered sugar + water).
