Vegan shortcrust pastry

When November draws to a close and the Advent season slowly begins, the cookie baking season starts for me, as for many others.

For several years, the first cookies I bake are cut-out shortcrust cookies. You only need a few ingredients that you usually have at home, and the preparation is simple enough to bake with small children.

These crunchy cookies are very popular with us. As soon as the first tray is baked and I put them on the table to cool, everyone rushes for them and the mostly still warm stars, hearts, snowflakes, and little Christmas trees disappear into the family's bellies.

Recipe

300 g spelt flour 630
150 g oil / margarine
100 g powdered sugar
1 tsp vanilla sugar
1 pinch of salt
1/2 tsp baking powder
25 ml plant-based milk

Preparation

  • Weigh ingredients, put them in a mixing bowl and knead with your hands into a smooth, supple dough; if the dough is too crumbly, add a little more plant-based milk

  • Place in the refrigerator for 1 hour

  • Preheat oven to 180 degrees fan / 200 degrees top/bottom heat

  • Roll out dough about 3mm thin on a floured surface, cut out shapes

  • Place raw cookies on a baking sheet lined with parchment paper and bake for about 8-12 minutes

  • Let cool and enjoy!
