The first leaves of the trees turn colorful, it gets cooler, and we feel the need to make ourselves comfortable indoors. Along with coffee and tea, my favorite Swedish yeast pastries, the Kanelbullar, are the perfect match. They spread a hyggelig feeling already while baking!

Recipe for about 12 pieces:
- 480g spelt flour
- 75g sugar
- 75g vegan margarine or oil
- 1/2 cube fresh yeast
- 250ml almond drink
- 1 tsp cardamom
- 1 pinch of salt
- 40g soft vegan margarine
- 50g sugar
- 2 tbsp Ceylon cinnamon
Also 4 tbsp almond drink and pearl sugar for garnish

Preparation of yeast dough:
- Warm the almond drink lukewarm and dissolve the yeast in it
- Put dry ingredients and the oil/margarine into a mixing bowl
- Add warmed almond-yeast mixture
- Knead with the dough hooks of the hand mixer until the dough detaches from the bowl's edge.
- Cover and let rest in a warm place for one hour

After the resting period:
- Knead the dough briefly
- Roll out on a floured work surface into a rectangle (20x40cm)
- Spread soft margarine evenly
- Sprinkle with sugar and cinnamon
- Roll up from the long side
- Cut into about 12 pieces
- Place on a baking sheet lined with parchment paper
- Let rest again for 25 minutes
- Preheat the oven to 250 degrees Celsius top/bottom heat
