In our new series, which revolves around cooking, we present a SoSUE seasonal recipe every month. This time, SoSUE editor Knuth reveals how he prepares green asparagus. Enjoy your meal!


Green asparagus.

Green asparagus is especially popular in spring because it has only 18 calories per 100g, making it a real slimming food. It also cleanses the blood, contains a lot of folic acid, acts as a diuretic, and is stimulating. The German asparagus season starts in April and ends in July.

The asparagus season starts punctually with spring. I'm a fan of green asparagus because it is quick and easy to prepare. I chose an Asian recipe. You can simply serve it with basmati rice. As a "filling side dish," I recommend a tuna steak, fried tofu, fried eggs, or a chicken leg.

This is what you need for cooking (about four people):

  • 3 tablespoons neutral cooking oil (no olive oil).

  • 1 - 2 tablespoons sesame seeds (depending on your mood).

  • 1 - 2 tablespoons fish sauce (available in any supermarket or Asian market).

  • 2 bunches of green asparagus.

  • Pepper from the mill.

  • No salt! The fish sauce is salty.

- Put a pot of water on and bring to a boil.

- Meanwhile: Wash the green asparagus and remove the lower "woody" parts. Unlike its white counterpart, green asparagus does not need to be peeled.

- Briefly place the asparagus in hot water and blanch. Then shock with cold water. This keeps the asparagus nice and green when frying. If you're in a hurry, you can fry the green asparagus right away, just not too hot, or it will burn.

- Heat the pan with cooking oil.

- Add the asparagus and fry, not too long, as the asparagus should remain crisp-tender.

- Deglaze with the fish sauce.

- Just before serving, mix in the sesame seeds; they give the asparagus a nutty, slightly bitter note.

Green asparagus Thai-style looks great on the plate and is a real treat.
