Rezept des Monats: Veganuary Avocado-Spinat Pasta

Who doesn't know the trend "veganuary"? A word blend of vegan and January. The new year has started and we are all full of good resolutions. Especially after the big holiday feasting. My green avocado pasta is completely vegan, full of minerals, vitamins, and unsaturated and thus healthy fatty acids. Cashews are an important plant-based protein source. It hardly gets better and more delicious. What do you think?


Recipe January

#veganuary

2 servings

1 ripe avocado
100 g spinach leaves (raw)
100 g cashew nuts 
2 tbsp nutritional yeast flakes (as a substitute for Parmesan)
4 tbsp olive oil 
Salt, pepper
approx. 250 g pasta
100 g stalk broccoli
2 tbsp pasta (preferably whole grain)

Soak cashew nuts in water for a few hours. At least two hours. Even better overnight. 
Drain and put into the blender with washed spinach leaves, nutritional yeast flakes, and peeled avocado. Add oil, salt, and pepper and blend. You might need a little water. Just add it gradually. 

Bring enough water to a boil and salt it. Roast the stalk broccoli in a pan and add pine nuts shortly before finishing. Cook the pasta al dente and mix with avocado pesto. Serve with roasted stalk broccoli and pine nuts.
