Recipe of the Month: Summer Pizzette

Rezept des Monats: Sommer-Pizzette

In one bite! These summer pizzettes are really perfect for a small hunger and very easy to bake! 

You need:

220 ml lukewarm water

1 tsp honey

2 tsp dry yeast (about 8 g)

400 g flour (550)

A splash of olive oil (about 40 g)

1 tsp salt (without iodine and fluoride)

Fruits (e.g. apricots, figs, berries, and tomatoes to taste)

2 Burrata (or Mozzarella as a substitute)

Olive oil

good salt, pepper, pink peppercorns, rosemary, thyme, lavender (each 1-2 sprigs, stems)

And here’s how:

For the dough, mix lukewarm water with the dry yeast and honey and let it sit covered for a while. Add flour, salt, and olive oil and knead together until the dough easily comes off the sides of the bowl. Or let the kitchen machine do it for you!

Best to leave covered in the fridge overnight. The dough volume doubles by the next morning. Knead the dough briefly again and form small palm-sized pizzettes. 

Grease the baking sheet and place the small dough pieces on the sheet with some space between them. Preheat the oven to the highest setting (250 degrees). 

Slice or tear Burrata or Mozzarella into pieces and spread on the small pizzas. Cut fruits, berries, or classic tomatoes smaller if needed and combine to taste. Lavender goes well with apricot. Pink peppercorns with fig. Just try it out. Salt and drizzle with some olive oil. Bake in the oven for about 15 minutes (250 degrees) until crispy. 

With it, an aperitif of a glass of ice-cold Lambrusco.
