Recipe of the Month - Lava Chocolate Cakes
Christmas is coming soon... this year is so different from before. We still have to keep our distance and limit our social contacts. Worries and fears weigh on us, so it is all the more important to take care of ourselves. By that, I also mean our mental health.
Chocolate has always been considered a comfort for the soul. The tryptophan it contains affects our brain neurotransmitters responsible for creating feelings of happiness. So no more guilt and bring on the chocolate cakes!

100g butter
2 whole eggs and 2 egg yolks
50 g sugar
2 tbsp flour

- Beat eggs with yolks and sugar at the highest speed until very frothy (this takes about 5 minutes!)
- Fold in the chocolate butter and sift the flour over it, then gently mix
- Ovenproof glasses or baking molds (e.g., grease a muffin tin and sprinkle with sugar or cocoa)
- Fill the batter up to a maximum of 2/3 and bake at 150 degrees for about 10 minutes. The surface is firm and the batter underneath very soft.
- Let the molds stand briefly and then carefully turn out.
Serve with compote or fruit salad. Here I prepared mango with lime juice, blueberries, and passion fruit, or mango with mint and pomegranate seeds.
Wishing you all the best and a healthy, blessed, and reflective Christmas!

About the author:
May I introduce myself?
My name is Bettina and I have been cooking with passion for as long as I can remember. Originally, I studied architecture and worked for many years as an architectural photographer. I am 55, have raised 4 children, and live with my husband, dog, and youngest child in Munich. I am also a grandma now.
Last year, I completed a one-year training as a nutrition consultant and mindfulness coach. Healthy food and a happy soul form the foundation for a healthy life, so I try to apply all my knowledge to healthy and delicious dishes.
For a few years now, I have been organizing cooking trips to Marrakesh. Unfortunately, Corona is currently throwing a wrench in the works.
From now on, I get to suggest a recipe to you every month. Mainly vegetarian and always seasonal. It should be quick and delicious. Promise!
