Recipe of the Month: Halloumi with Gremolata

Rezept des Monats: Halloumi mit Gremolata

Finally summer. Finally out to the lake, into the garden, onto the balcony. Fire up the grill and sip a glass of chilled rosé until the food is ready. 
I came up with a quick recipe for you that works both in a grill pan and on a gas or charcoal grill. 

You need for about 2 servings

1 halloumi
1 bunch parsley
1 organic lemon
1 clove of garlic
a little sea salt
Olive oil
pink peppercorns
small handful of hazelnuts (roasted)

For the gremolata, wash and dry the parsley and finely chop it without thick stems. Peel the zest from the organic lemon with a vegetable peeler and chop it as well. Make sure not to use the white part of the peel as it tastes bitter. Press the garlic. Mix parsley, lemon, and garlic with 2 tablespoons of olive oil and season with a little sea salt. 
Remove the halloumi from the foil and let it drain a little. Cut it in half once along the thickness. Fry in a grill pan or on the grill for about 2-3 minutes on each side until the typical grill pattern appears. Serve with gremolata, chopped hazelnuts, and pink peppercorns. With crispy baguette.
