Recipe of the Month - green breakfast bowl
Full of the best intentions, we start a new year. The darkest nights are already behind us, the cookie supplies have been eaten, the Christmas decorations are gradually disappearing into boxes and cartons...
After so much indulgence, we now crave clean eating. Vegetables, preferably raw, full of healthy nutrients.
Spinach is one of the low-calorie vegetables, full of secondary plant compounds, acts as an antioxidant, and supplies us with vitamin C and beta-carotene, among other things.
Cucumber, like spinach, mainly consists of water and is a true moisture booster for our skin and is also low in calories. Most vitamins are in the peel, so be sure to choose organic quality! Then the peel can be used as well. One apple a day keeps the doctor away.... Who doesn't know this saying! Here the apple provides us not only with fruit sweetness but also pectin, which can lower cholesterol levels. Vitamins are also in the peel here. So buy organic here too and do not peel.
Banana provides us with quick energy through its fruit sugar content. Perfect to start the day. Potassium strengthens our heart. Magnesium not only increases our performance but is also involved in muscle building, among other things.
Last but not least, lemon juice. Full of vitamin C, it strengthens our immune system and helps us absorb iron (spinach) better.
A true health booster. Exactly what we need right now. Take care of yourselves and your loved ones!
R E C I P E
for about 2 people
1 frozen banana peeled
1 half apple
1 small garden cucumber
Juice of half a lemon (possibly plus some water)
a good handful of fresh spinach (approx. 100-150g)
1 ripe avocado
for the topping
a handful of blueberries
Apple slices
Almond butter
Cacao nibs
Muesli flakes (unsweetened)
Put all ingredients (cut solid ingredients into pieces) into a high-performance blender and puree until creamy. This takes about a minute.
Distribute almond butter, cacao nibs, muesli flakes, and fruit to taste on the bowl.
Don't forget: Always eat slowly. Digestion and thus the breakdown into important nutrients already begins in the mouth.
