Recipe of the Month - Roasted Cauliflower

Today there is a family recipe again that usually tastes good to both young and old, provided you like cauliflower. There are many reasons to love it because it is a low-carb vegetable with many ingredients that promote health and slimness. Cauliflower has many proteins and is almost fat-free. It contains vitamins B, C, K, calcium, magnesium, phosphorus, and potassium. It also contains sulforaphane and isothiocyanate, which can inhibit tumor cell growth and may help prevent cancer.

Ingredients (For 2 servings as a main dish or for 3 people as a side dish)

1 cauliflower (approx. 500 g)
80 g bacon
60 g butter
40 g panko breadcrumbs
1 bunch parsley
1 sprig of rosemary

Preparation

Remove the greens and core from the cauliflower, wash it, and pat dry.
Afterwards, it is cut into thin slices.
Sauté these in a large pan for about 3 minutes.
Meanwhile, finely chop the parsley and onion.
Add butter and bacon to the pan and continue roasting while stirring.
Now add the onions and salt everything generously.
 
As soon as the onions release water, sprinkle the panko breadcrumbs on top and mix well.
Finally, pluck the needles from the rosemary sprig and add them together with finely chopped parsley to the dish.
Once everything is golden-brown and crispy fried, it can be served.
If necessary, season again with salt and pepper.

If you prefer to enjoy the cauliflower vegetarian, simply use a neutral vegetable oil instead of butter and omit the bacon. It tastes very delicious too!
