Recipe of the Month: Apple meets Orient
Puff Pastry Apple Roses
For 6 muffin tins
1 pack of butter puff pastry (frozen, 300 g)
2 Boskoop apples
Some lemon water
Cinnamon and sugar (to taste)
Chopped pistachios or other nuts
40g melted butter
1 tablespoon maple syrup
2 tbsp jam or jelly (here quince)

Lay out the dough sheets side by side and let thaw. Peel the apples and slice them into very thin (!) slices. Remove the core. Immediately place in a bowl with lemon water to prevent the apple slices from browning. If necessary, roll the puff pastry sheets into a rectangle and generously sprinkle with cinnamon sugar. Fan out the apple slices on the upper half. Some slices may hang over the edge.

Fold the bottom part over and carefully roll into a flower. Do not roll too tightly. This helps the "roses" open better. Place in buttered muffin tins. Mix melted butter with maple syrup and drizzle over the flowers. Sprinkle chopped pistachios on top. Bake at about 150 degrees for around 20 minutes. Best to check regularly. The apple slices should become soft and the puff pastry fully baked! Do the skewer test. Warm jelly or jam and brush the still warm roses with it. Powdered sugar works too, of course! Serve with crème fraîche. Voilà!
