Drink of the Month - Batida de Coco Cheesecake in a Glass
This month it was really hard for me to find a suitable cocktail and this is now the third attempt for this article. You hope that spring will start in March to mix the first sangria on the terrace, but the temperatures are still too wintry and the sky too gray for that.
I wasn't really motivated the last few weeks, buuuut suddenly it was there... A light went on inside me and I had an idea!
Batida de Coco Cheesecake
Ingredients:
50ml Batida de Coco
350g mascarpone
250g cream cheese
65g coconut blossom sugar
1 tsp vanilla extract
1 lime
150g oat cookies
Grated coconut, Raffaello, almonds or raspberries optionally for decoration

Preparation:
Put all ingredients in a bowl or in the Thermomix and stir for about 20 seconds until a smooth cream forms.
Break the oat cookies and put them in a glass. Add a layer of coconut cream. Then cookies again and finally another layer of coconut cream.
Put it in the fridge and decorate shortly before serving.
