Recipe of the Month: Veganuary Avocado Spinach Pasta

Who doesn't know the trend "veganuary". A neologism made up of vegan and January. The new year has started and we are all full of good intentions. Especially after the big festive feast. My green avocado pasta is completely vegan, full of minerals, vitamins and unsaturated and therefore healthy fatty acids. Cashews are an important source of vegetable protein. It doesn't get much better or more delicious than this. What do you think?

2 servings
 
1 soft avocado
100 g leaf spinach (raw)
100 g cashew nuts 
2 tbsp yeast flakes (as a substitute for Parmesan)
4 tbsp olive oil 
salt, pepper
approx 250 g pasta
100 g broccoli stalks
2 tbsp pasta (preferably wholemeal)

Soak the cashews in water for a few hours. At least two hours. Better still, overnight.
Drain and put in a blender with washed spinach leaves, yeast flakes and drained avocado. Add oil, salt and pepper and blend. You may need a little more water. Just add it gradually.

Bring enough water to the boil and add salt. Roast the broccoli stalks in a pan and add the pine nuts just before the end. Cook the pasta until al dente and mix with the avocado pesto. Serve with roasted broccoli and pine nuts.
