This cake is awesome, you need to try it !! Here you go:
You'll need these ingredients:
Dough:
100 ml warm milk
200 ml whipped cream
1 package of dry yeast
4 tablespoons sugar
75 g melted butter
1 egg, beaten
pinch of salt
530 g flour
Filling:
65 g very soft butter
150 ml whipped cream
65 g sugar
approx. 3 tsp cinnamon (more if needed)
And this is how it works:
1. Mix milk, butter, cream, 2 tablespoons sugar and warm slightly (a little above hand-warm). Stir in yeast, salt, egg, 2 tablespoons sugar and half of the flour (either with a wooden spoon or in a food processor with dough hook). When everything is thoroughly mixed, stir in the remaining flour and work everything into a smooth dough, about 5 minutes. *After the dough is very soft, I recommend preparing it with a food processor, kneading by hand is almost impossible.
Place the dough in a clean, oiled bowl and let rise, covered, at room temperature until doubled in volume (about 1 hour), depending on temperature.
2. Meanwhile, heat the butter, cream, cinnamon and sugar for the filling until it has a slightly thick consistency. Then let it cool down again.
After rising, knead the dough briefly and lightly, then roll it out on a well-floured work surface to 45 cm x 60 cm. If it is still too sticky, lightly flour and turn it over repeatedly while rolling it out. This will prevent it from sticking to the work surface. 4.
Spread a thin layer of filling on the rolled-out dough. Roll up the dough from the short side, and cut the roll into pieces about 3 cm wide.
5. lay out baking paper on the bottom of the springform pan and pinch it with the pan (excess baking paper can then be easily cut off). Arrange the Cinnamon Rolls in a circle in the springform pan. Note: If there is not enough room for all the cinnamon rolls, bake the rest in a loaf pan
6. cover and let the Cinnamon Rolls rise again at room temperature until they have risen significantly, about 1/2 hour. For a little shine, you can brush the Cinnamon Rolls with 1 tablespoon of egg mixed with 2 teaspoons of milk before baking (note: I like to make a little more filling and brush it on the Connamon Rolls).
Bake at 170°C in a preheated oven until golden brown, about 20-25 minutes. Allow to cool slightly and drizzle with icing (powdered sugar+water).
